  按照中醫“四季側重”的養生原則,春氣通肝,春季補五臟應以養肝為先。而眾

  多蔬菜之中,最適宜養肝的就是菠菜。中醫認為菠菜性涼味甘,能養血、止血、斂陰、潤燥,長於清理人體腸胃的熱毒。

  從營養角度,菠菜含有豐富的蛋白質、維生素 A、B、C、K。每100克菠菜含蛋白質2.4克(500克菠菜相當於2個雞蛋的蛋白質含量),維生素A 3毫克(比胡蘿蔔多),維生素 B1 0.06毫克、B2 0.16毫克、維生素C 31.4毫克(為番茄的3倍)。人體日常生活中攝入的蛋白質充足,則生長發育快,氣血旺盛,精力充沛。

  菠菜對高血壓、糖尿病、貧血等都有較好的輔助治療作用,可參考以下做法——
